How to Make Frankie's Signature Curry Sauce
Frankie’s Signature Curry Sauce is all about keeping things simple. Ready in just a few minutes, it makes creating a delicious, authentic Chinese curry at home effortless.
What really makes it your own is what you add to it your favourite meat, seafood or vegetables, a finishing touch, and whatever you choose to serve alongside it.
From a quick midweek dinner to something a little more special, here's how to make it.

The Basics
- Add 1 tablespoon of curry paste per person to a saucepan with approximately 200ml of water per portion.
- Heat over a medium heat and stir well until the paste forms a smooth, creamy sauce.
- Adding raw meat, fish or seafood? Add to the sauce and simmer until fully cooked, stirring regularly. Chicken and pork should reach a minimum internal temperature of 74°C.
- Using pre-cooked protein or keeping it veggie? Simply simmer gently for 3–4 minutes, until piping hot.
- For a thicker or thinner sauce, simply adjust the amount of water to your preferred consistency.
1 tablespoon + approx. 200ml water = 1 portion.
Pairing Ideas
With meat
Chicken thighs, diced pork, or beef strips all work well. Brown the meat first, then add the sauce and simmer until it's cooked through.
With fish and seafood
Firm white fish or prawns need very little time. Add them near the end of cooking so they don't overcook, just a few minutes until opaque and cooked through.
Vegetarian
Chickpeas, tofu, or a mix of seasonal vegetables make a satisfying meat-free version. Simmer until everything is heated through and tender.
Serve it with
Steamed rice, egg-fried rice, noodles, fries or warm naan all make good partners for soaking up the sauce.
Tips From the Kitchen
- As a guide, one 200g jar is enough to flavour a meal for four-six, depending rich you like your sauce.
- Keep the heat gentle. A slow simmer brings out the flavour better than a hard boil.
- Leftovers keep well in the fridge for up to 6 months. Reheat gently on the stove or in the microwave.
